KEY LARGO -- Fresh ingredients and organic meats are the focus for the new Mindful Mermaid Café in Key Largo.
The restaurant previously operated in a food truck at Island Dolphin Care but has since merged with Chubs Subs in the Tradewinds Plaza. Its menu is a mixture of subs, sandwiches, salads, juices and smoothies.
Laurie Cretsinger, who previously owned the food truck and now co-owns the revamped restaurant, said she was wants to dress the place up like the 1960s.
"They used to call us 'The Hippie Wagon,'" Cretsinger said, explaining that she wants to change the vibe of the sub shop.
Jeremy Yong, who owned Chubs Subs and is now co-owner of the new venture, says he's game for the new changes.
Yong's specialty is working behind the food counter, where he experiments with different sauces to make his sandwich renditions. Since many couples have one person in the relationship who is vegan or vegetarian, the owners want their café to serve customers with varied lifestyles.
As the menus of the two restaurants are merged, one thing will be going away: chicken wings. Because the owners said they are only stocking organic foods, it wasn't affordable to continue to sell wings.
Among the salads are egg, chopped Greek and Italian. A garden salad, kale and garlic kale is also offered to vegetarians or vegans. Kale is featured throughout the menu.
The café will soon have a juice bar separate from the food counter. It also carries a beer and wine license and plans to carry organic varieties of the beverages.
The café is located at Mile Marker 101.4, oceanside, and can be reached at 305-451-2929. Lunch delivery for Key Largo customers is planned.
